Salt


“Sugar goes up and out and salt goes down and in. So the more down the salt goes and the more in the salt goes, it’s going to damage your joints, it’s going to make your arteries hard, it’s going to give you varicose veins”-Patrick Delves.


The average American eats more than twice the daily recommended amount of sugar each day. Table Salt or sodium chloride, is a bleached, processed salt. In the process of heating table salt it loses its minerals; it is then fortified with iodine. Raw salts such as Himalayan sea salt are thought to be okay when used in moderation. Better salt substitutes include dulse and kelp granules.






Sugar/ Sugary Beverages


According to the CDC, in 2017–2018, the average daily intake of added sugars was 17 teaspoons for children and young adults aged 2 to 19 years. The high sugar content in cola or other sugary drinks can cause blood sugar spikes, joint pain, high blood pressure and cholesterol, poor mouth health (receding gums, tooth decay and cavities) and excess weight gain. Acidic foods can be very damaging to the body. To neutralize a glass of cola with a pH of 2.5, it would take 32 glasses of alkaline water with a pH of 10, it simply isn’t worth it.



Cholesterol


Cholesterol is a waxy lipid (fat) found in all the cells of the body. It is necessary for building the cells of the brain, nerves and hormones. Most of the body’s cholesterol us made in the liver, though some is derived from the foods we eat. “Bad” cholesterol is known as low-density lipoprotein (LDL). “Good” cholesterol is referred to as high-density lipoprotein (HDL). High levels of cholesterol (LDL) can lead to plaque build-up in the arteries.


A high fiber diet is essential for eliminating high cholesterol as fiber bonds to cholesterol to help our body get rid of it. Cholesterol is associated with the liver. Herbs that help cut through fat and oils such as fenugreek and turmeric, with a liver affinity to the liver are particularly useful.




Flour


When using flour, unbleached whole wheat, preferably organic, is better than all purpose flour. You can opt to use a non-hybridized wheat like Einkorn, or an alkaline grain such as spelt or kamut. You can also use gluten free flours like garbanzo or coconut.






Dairy


Dairy should also be added to this list. It is one of the main food allergens, along with gluten, that has been linked to problems such as asthma and eczema, both of which effect Blacks at higher rate. Blacks have a much higher intolerance to Dairy than their white counterparts yet despite this, Black people are still encouraged to drink dairy daily.



“In the United States, approximately three fourths of African-Americans have the potential for symptoms of lactose intolerance because lactose digestion depends on the presence of the enzyme lactase-phlorizin hydrolase which is reduced by up to 90-95% in individuals with lactase nonpersistence. The 'African-American diet' is more likely to be low in a variety of vitamins and minerals, including calcium. African-Americans consume low amounts of dairy foods and do not meet recommended intakes of a variety of vitamins and minerals, including calcium. Low intake of calcium and other nutrients put African-Americans at an increased risk for chronic diseases. The 2005 Dietary Guidelines recommend consuming three servings of dairy foods per day to ensure adequate calcium intake, among other nutrients, and the National Medical Association has recently published a similar recommendation of three to four servings of dairy per day for the African-American population. Research has shown that lactose maldigesters, including African-American maldigesters, can consume at least one cup (8 oz) of milk without experiencing symptoms, and that tolerance can be improved by consuming the milk with a meal, choosing yogurt or hard cheeses, or using products that aid in the digestion of lactose such as lactase supplements or lactose-reduced milks.” Emphasis mine (17)


I find it very frightening that instead of suggesting that only Whites consume milk, African Americans are suggested (by the National Medical Assocation) to drink dairy, even though we are deemed as “lactose maldigesters”. It is reiterated three times that according to their tests, Blacks have lower levels of calcium, and because of this we should consume milk. They’d prefer that we’d consume dairy with lactase supplements rather than making separate guidelines tailored to our nutritional needs.
